Grown by smallholder farmers in the lush highlands of Molino Norte, Matagalpa, this medium roast captures the very best of what Nicaraguan coffee has to offer. Cultivated across a sweeping altitude range of 900–1,590 meters in rich clay mineral soils, a carefully selected blend of Yellow and Red Catuai, Catimor, and Parainema varieties produces a cup of beautiful balance and nuance. Smooth cocoa provides a comforting foundation, while floral and citrus tones lift every sip with a brightness that lingers elegantly to the finish.
Each lot is fully washed, fermented for 12–14 hours to develop its characteristic clarity and depth, then dried patiently on patios and raised beds by the same smallholder farmers who have called these highlands home for generations.
